WITH the game season now properly under way, we are being asked for suitable wines to go with this excellent source of low fat, organic, free-range food.
Grouse is, as usual, very expensive this year but the ever-popular pheasant and partridge are great value birds to try alongside mallard and venison.
Incidentally, try this method for cooking partridge: put a knob of butter inside each bird and roast on a baking tray in a very hot preheated oven at 220 degrees for 25 minutes - you'll find the birds come out deliciously moist and tender.

Soft and spicy with hints of leather and cherry, this velvety wine is perfect for pheasant and game birds that have not been hung for too long. The wine's freshness is a perfect complement to juicy young partridges too.
Los Robles Carmenere 2006, Chile (FairTrade)
The Fairtrade Labelling Organisation International is a non- profit making body which assists disadvantaged communities to earn a sustainable livelihood through the export trade. This Carmenere shows delightful warm plum and damson fruit flavours and a long soft finish. Los Robles was recently nominated as 'Best Chilean Winery'.
Domaine de la Souterranne Merlot 2006, France
A beautifully structured wine, this merlot from the Languedoc is made by award-winning international winemaker Dave Morrison and is brimming with gorgeous plum and damson fruit that would be a perfect match with venison or grouse.
Lizard Point Shiraz 2006, Australia
A wonderfully ripe and fruity shiraz with flavours of leather and eucalyptus, this is a great match with mallard or any other really rich game including wild boar sausages and well-hung grouse.
